Spinach is such a versatile vegetable and can be used in a wide variety of recipes. This healthy green vegetable is full of vitamins, minerals, fiber and low in calories. It’s especially important for vegans and vegetarians due to its high calcium and iron content, easier to absorb in cooked spinach. Lutein, a carotenoid found in spinach, can help protect against eye diseases and cannot be absorbed unless accompanied by fat.
Raw spinach is significantly higher in folate, vitamin C, niacin, riboflavin and potassium. Anti-inflammatory properties of some of the nutrients can mitigate symptoms of arthritis, osteoporosis, migraines/headaches and asthma.
