It is the presence of lauric, capric and caprylic acid in the oil which are responsible for antimicrobial, antioxidant, antifungal, antibacterial and soothing properties. The human body converts lauric acid into monolaurin which helps in dealing with viruses, protozoa and bacteria causing diseases such as herpes, influenza and cytomegalovirus. Coconut oil consists of more than ninety percent of saturated fats. We have to remember that all saturated fats are not the same. Some saturated fats occur naturally, while other fats are artificially manipulated into a saturated state through the man-made process called hydrogenation. These manipulated saturated fats are also called trans-fats and should be avoided. Apart from the ‘good saturated fats’ the virgin coconut oil contains some poly- and monosaturated fatty acids, as well as vitamin E, vitamin K and iron.
